Chicken and Rice Recipe

I found this recipe at Scattered Thoughts of a SAHM and thought I'd share. I'm adding it to our menu this week.

1 can of Cream of Chicken soup
1/2 cup of milk
1/2 tsp of salt
1/4 tsp of pepper
1/3 cup Mayo
2 cups chopped chicken
1/2 cup chopped onion
1 cup frozen peas
1/4 cup chopped green or red bell pepper
2 cups cooked white rice
1 cup shredded cheddar cheese

1.  Preheat oven to 350 degrees.  Blend soup, milk, salt, pepper, and mayo in a medium bowl.  Combine chicken, onion, peas, bell pepper and rice in a large bowl; mix gently.
2.  Gently fold soup mixture into the chicken mixture to combine, fold in half the cheddar cheese.
3.  Spray a medium casserole dish with cooking spray.  Spoon in chicken mixture.
4.  Sprinkle top of casserole with remaining cheese.  Bake until top is golden brown, about 25 minutes.

-This casserole can be made ahead and frozen or stored in fridge until ready to bake. (if frozen, defrost in fridge, then bake for about 30 to 35 minutes, or until heated through.)
-Replace peas for broccoli
-sprinkle top with fried onions
-To prepare in the microwave, proceed as recipe directs through step 4 but do not ass the remaining cheese.  Microwave on medium for 10 minutes: add remaining cheese.  Microwave 10 more minutes til heated through.
