Flourless Peanut Butter and Banana Chocolate Chip Muffins

Hi folks!

I’m Ally.  I’m a wife, stay-at-home-mom and food blogger.  For the past {almost} five years, I’ve been dishing up my favorite family meals, side dishes, drinks and desserts.  My food blog is my outlet away from real life.  Because everyone takes photos of what they eat, right?  {And makes their family wait to take their first bite until I’ve finished photographing, right?}

Well, not really.

Also during these past five years, I’ve birthed three babies, changed jobs twice and most recently became a stay-at-home-mom this summer.  We live in the small town of Wilton, Iowa, enjoy the simple things in life and try to keep our heads above water while raising three children under the age of 5.  Remember, my blog is MY outlet.  As most moms know, you need time “away” from the daily tasks to just do something you love.

Cooking, baking and sharing it with others is what I love.

When Farrah asked for some guest posts while she would be away I jumped at the chance.  I love finding new readers and giving them some insight into my life.  So here we go!

Here is my kitchen story.  I make at least 90% of our meals and snacks.  Not because I have to, but because I like to.  I take pride in knowing what goes in our mouth and if I can be honest, homemade usually tastes better than store bought!  So when I have free time {very little} or are bored {very rare} I cook!  And bake, as sweets are my thang.

Today I wanted to share a super easy muffin recipe.  These of course are great for breakfasts, but we also eat them daily as snacks.  I try at least once a week to bake up something for snacks.  Are they always healthy?  No.  But at least I know where they came from.  Requiring no flour, these are easy.  And who doesn’t always have that one lonely brown banana sitting on their counter?  As for the chocolate chips?  Well, those are just a given.

Flourless Peanut Butter and Banana Chocolate Chip Muffins
1 very ripe banana
1 egg
1/2 c. peanut butter
1 T. vanilla
1/4 t. baking soda
1/2 c. chocolate chips
1.  Preheat the oven to 400 degrees.
2.  Grease a 12-cup muffin tin.  Line with liners if desired.
3.  Combine all ingredients minus the chocolate chips in a blender or food processor.  Blend until smooth and creamy.
4.  Fold in the chocolate chips.
5.  Fill muffins tins halfway up with batter.
6.  Bake for 13-15 minutes or until springy to the touch.
7.  Will stay fresh for 3-4 days in an airtight container or in the freezer for 3 months.

    Interesting recipe. You'd think they would end up mushy but they don't looknow that way!
